It's as if beer said, "How about trying something wilder?" Sour Ale beers are known for their acidity and refreshing qualities, which bring a whole new dimension to the world of beer. The origins of these beers go back deep into history, when they were spontaneously fermented by wild yeasts and bacteria.

For me, Sour Ales are a very wide range of possibilities, flavors and surprises. And it's actually a bit of a question whether people in the Czech Republic are able to accept Sour Ale as "beer". My experience is that when I give someone sour ale without previous experience, it often ends up with them making a face and saying that this is not beer... So I learned that when I give Sour Ale to someone without previous experience, I immediately say: "Don't expect beer, but a refreshing fruit lemonade with alcohol." And it works quite well.

One of the other benefits of Sour Ale, which I have experienced firsthand, is that it can appeal to people who don't like beer...

Do you like beer? And what about your partner, partner, friend or friend? Are they not exactly enthusiasts? Then taking them to Sour Ale is the ideal start to the world of beer.

And how is sour beer actually made?

To put it simply, technologically there are basically three options for making Sour Ale:

  • Sourcing from the air, aka wild fermentation - let it run its course and be surprised.
  • Use of lactobacilli - controlled fermentation in the brewhouse
  • Using Philly Sour yeast - which was developed to sour beer during fermentation, which means you add it all the way to the tank.

And then, of course, there's a whole range of things you can make sourdough out of, there are no limits to your imagination.
